Farmer’s Market Recovery Soup with Endless Possibilities (Stop Midway for a Fabulous Marinara Sauce!)
Place stockpot over medium high heat.
Finely chop one medium Onion, one large Carrot and 4 stalks of Celery plus tender leaves inside stalks.
Add chopped vegetables to pot along with one tablespoon of Olive Oil and saute’ for 5 minutes.
Squeeze in one tablespoon of Tomato Paste concentrate from the tube.
Coarse chop 10 Sun-Dried Tomatoes and one tablespoon of fresh Garlic and add to pot.
Meanwhile, chop 10 large Vine-Ripened Organic Tomatoes into small pieces and add one tomato at a time.
Add one teaspoon of Sugar.
Add one tablespoon of Chili Paste. (Optional)
Salt and Pepper to taste.
Turn down to medium low heat and simmer slowly for one hour.
Chop a handful of fresh Basil into small ribbons and a handful of Parsley and add to pot.
STOP HERE IF YOU WANT AN AWESOME MARINARA!
ADD TO YOUR FAVORITE PASTA ALONG WITH A HANDFUL OF PARMEGIANO REGGIANO AND CRACKED PEPPER FOR A DELICIOUS SUPPER IDEA!
To continue making soup:
Add one cup of Organic Chicken Broth.
String and chop one cup of fresh Green Beans and add to pot.
Simmer for ten minutes then add one cup of diced zucchini.
Turn off the stove and cover soup pot for at least 30 minutes before serving.
Enjoy a most DELICIOUS NUTRITIOUS bowl of lovely soup that is sure to cure what’s ailing you! Yum-O!
The next day is where the Endless Possibilities begin.
Ladle a desired size bowl of soup per person.
Look in your fridge to see what you have from the prior week that can be added to your soup for variations.
Example: I looked in my fridge to see what leftovers I had: 9-Bean Soup, Turkey Meatloaf and Penne Pasta with My Homemade Pesto Sauce.
I added a Tablespoon of Bean Soup, a sliced of Meatloaf and a small handful of coarsely chopped Pasta Pesto.
I put my perfect proportion of soup in a small saucepan and heated thoroughly.
Crazy Good!
